Meringues Beat together 2 egg whites 1 cup sugar 1 tsp malt vinegar 1 ½ tablespoon boiling water. Using an electric beater – mix the above ingredients together until glossy and very stiff, this will take about 15 minutes. Mix in a teaspoon baking powder. Drop small spoonfuls onto a lined baking trays. Baked at 150 degrees celcius for about an hour until crisp. Makes 24 meringues. Mixed 2 tablespoons cornflour ¾ cup water Juice of one lemon ¼ cup sugar 2 x cups frozen berries 1 cup frozen raspberries 1 cup frozen strawberries Mix corn flour and water, place into a saucepan with lemon juice and sugar. Bring to the boil stirring constantly until thickened. Add berries and cook gently until they have just softened. Let cool and then serve with the meringues and whipped cream. |
