Omaha Organic Blueberries - Blueberry Buckwheat Pancakes

 

Makes 8 / Ready in 10 minutes + soaking time

 

1 cup organic buckwheat flour

1 cup plain greek yoghurt

1 free range egg, lightly beaten

1 tsp butter, melted

1/4 tsp sea salt

1 tsp baking powder

1/2 cup fresh or frozen oob blueberries

Organic Honey to garnish

 

Method

soak flour in yoghurt overnight ( soaking buckwheat flour in yoghurt makes a light, fluffy pancakes the next day. Slight fermentation will take place, a bit like yeast)

Stir in the egg, butter, sea salt and baking powder. Thin if required with milk or water.

Cook on a heated griddle with a smear of seasame oil. Flip when bubbles appear on the surface.

serve warm topped with berries & a drizzle of honey.
